This is a take on the Cabbage Soup Diet but I eat it because it’s delicious, not that I’ve ever experienced any weight-loss due to it! I also find it handy for using up my delivered organic fruits ‘n’ veg.
3 – carrots
1 – parsnip
1 – sweet pertater
3 – leeks (trimmed and washed)
1/2 – green cabbage
1 – tin of chopped tomatoes in garlic & oil (pre-spiced! so easy!)
1 – tin of condensed organic veg stock (I used President’s Choice)
3 – garlic cloves, pressed
1 inch – fresh ginger root, minced
1 – bouquet garni of black peppercorns and coriander seeds
water to cover
Directions:
Wash and chop all the veg relatively evenly into bite-sized pieces. Sweat the veg until they start to brown in the bottom of your slowcooker (on high). Add the stock, tomatoes, garlic, ginger, and water to cover. Chuck in the bouquet garni. Bring to a boil for maybe 20-30mins, then put on low and simmer until the veg are soft (about 2hrs). I didn’t whiz this soup up, but you could if you wanted (removing the bouquet garni first of course).
Serve with fresh bakery bread and unsalted butter. Weight-loss never tasted so good!
